Spicy Thai Carrot Cake with Coconut Buttercream

Inside this cake are four layers of moist carrot cake studded with jalapeno, shredded coconut and curried walnuts.
We make our own curry spice mixture to coat the walnuts before folding them in the batter and coating them on the outside so every bite ensures every flavor!
